On Monday’s menu, created from surplus ingredients that would otherwise go to waste:
– Italian-style ‘meatballs’ with peppers and kale
– Lemon and coriander houmous
– Colourful mixed salad (celery, lettuce, peppers, carrots and cherry
tomatoes
